raspberry scones

I really had nothing to do today so I tried out one of my recipes that i brought home from the United States. I went to the food store to get all the ingredients i needed and i even got some new nail polish ;) (of course i couldn't resist). I think cooking was just the right thing to do on such a cold fall day! Even just riding my bike to the store was enough of the cold weather for me :)


So here the ingredients you'll need for eight scones:
  • 2 Cups/260g flour
  • 0.25 Cup/50g sugar
  • 1 TBS sugar (for the cream)
  • 2.5 TS baking powder
  • 1 TS grated lemon zest
  • 0.5 TS salt
  • 1 stick/120g butter
  • 0.75 Cup/180ml cream
  • 1TBS cream (for the cream)
  • 1 Cup frozen raspberries
What to do?:

  1. heat the oven to 450°F
  2. combine flour, 0.25 Cup sugar, baking powder, lemon zest and salt in large bowl and whisk
  3. cut butter into flour and mix
  4. pour 0.75 Cup of cream and (using your fingers) mix untilincorporated and rough, slightly sticky Mound has formed
  5. take dough out and knead until most of the flour is incorporated and together
  6. form dough into a rectangle, arrange reaspberries on the lower 2/3 of the rectangle and press them into dough
  7. fold the dough into thirds, starting with the berryless part.
  8. you will get an even, 1 Inch thick block
  9. slice the dough crosswise in four equal pieces and cut each one diagonally
  10. Transfer the pieces to a flouered plate, put them in the freezer for 5 minutes
  11. Take them out of the freezer, put them on a baking sheet and bake for about 20 minutes
